HOW TO MAKE BENGALI STYLE NIRAMISH ALOOR DUM RECIPE

ALOOR DUM or DUM ALOO is a popular Indian recipe.  It's mostly prepared in Bengal during winter months using newly harvest baby potatoes & also during festival. Here I share NIRAMISH ALOOR DUM in Bengali it's called vegetarian. It's make without Onion & Garlic. ALOOR DUM perfect breakfast recipes that's serve with Luchi or Poori, Karaishutir Kachuri, Radhabllavi. Basically potatoes are slowly cooked in low flame in a gravy with spices. This recipe is very tasty and mouthwatering. ALOO DUM is made many ways like Punjabi style, Kashmiri style, Bengali style etc. ALOO DUM always use baby potatoes but here I use medium size potato.


HOW TO MAKE ALUR DUM

INGREDIENTS

Boiled potatoes - 7-8 medium size
Tomato - 2 ( paste )
Ginger - 1 Inch ( paste )
Green chilli - 1 ( paste )
Turmeric powder - 1 teaspoon
Coriander paste - 1 teaspoon
Cumin paste - 1/2 teaspoon
Red chilli paste - 1 teaspoon
Dry Fenugreek leaves - 1 teaspoon
Sugar - 1 teaspoon ( optional )
Oil - 2 tablespoons
Garam masala powder - 1/2 teaspoon
Ghee - 1 teaspoon

FOR TEMPERING

Cumin seeds - 1/2 teaspoon
Dry red chilli - 1 no.
Asafoetida - 1/2 pinch
Bayleaf - 1 no.

PROCESS

At first take a pressure cooker add potatoes, water and salt. Pressure cook the potatoes. Remember that potatoes should not be over cooked but half cooked.

Leave it for cool down and peel the potatoes. Prick the potatoes with a fork , they absorb all spices very well.



Marinate the potatoes with salt and some turmeric powder. Take a karai pour oil, heat it.

Add potatoes fry until golden brown colour. Take out and keep it aside.

Then add cumin seeds, whole dried red chilli, bayleaf and asafoetida. Saute one minute.

Now add tomato paste, saute it. Add ginger, green chilli paste, saute well.

Take a bowl add cumin paste, coriander paste, red chilli paste, turmeric powder and add little water, mix them. Here you can use cumin, coriander and red chilli powder instead of paste.

Add mix masala paste in the same karai. Saute well until release the oil.



Add fried potatoes, warm water, mix them well. Add salt, sugar.  Again Mix them well. Cover and cook it on low flame for 5-10 minutes.

Then add kasuri methi, garam masala powder and ghee. Mix it and cook for 1- 2 minutes.


Ready your Bengali style ALOOR DUM. Serve hot with poori or Kachori, chapati, paratha or Jeera rice. Enjoy.
