HOW TO MAKE FRESH COCONUT DRY FRUITS LADOO|BARFI|SANDESH AT HOME

Today I will share a quick, delicious and easy to make fresh COCONUT sweet recipe. A delicious treat to make for any occasion, celebration of festivals like Durga Puja, Diwali, Rakshabandhan, Ganesh chaturthi, fasting, prasad etc. COCONUT fat is healthy fats, rich in amino acids, fibers. It provides low carbs and protein along with many essential minerals, such as manganese, copper, iron and selenium. It improve good cholesterol levels, control blood sugar level. It contains polyphenol antioxidants, which is protect our cells from damaging. COCONUT is used for versatile food preparation, sweet and savory foods. This COCONUT sweet recipe is basically a round or ball shaped Indian sweet or fudge prepared from fresh or desiccated coconut powder with sugar, milk. COCONUT LADDU or BARFI make different way and different things like milkmaid, khoya, milk powder or only sugar. Here I use fresh COCONUT, milk powder , milk, sugar and dry fruits powder.


HOW TO MAKE COCONUT LADDU|BARFI

INGREDIENTS

Fresh coconut - 2 medium size
Sugar - 11/2 cup ( According to your taste )
Milk powder - 11/2 cup
Dry fruits - Finely chopped / powder
Green cardamom powder - 1/2 teaspoon
Milk - 1/2 cup
Ghee - 2 tablespoons
Pistachios for garnishing

PROCESS

Take two fresh COCONUTS, remove the hair of Coconuts and break them. Remove the COCONUT karnel from its shell and remove the brown outer skin using a peeler. Cut the Coconut into small pieces.

Take a mixer jar put Coconut pieces and grind it. Prepare the coarsely ground powder.



Take a pan pour ghee, heat it. Add Coconut, sugar, milk powder and milk. Mix them properly and cook at medium to low flame. Stir continuously.


Add some dry fruits powder or finely chopped , mix it. Continuously stirring until it reaches the thick consistency. When let the mixture come together add green cardamom powder. Mix it properly.


Switch off the gas flame. Grease a plate with ghee, pour the COCONUT mixture in it. If you want to make BARFI, Spread the mixture evenly.


Leave the COCONUT mixture for cool down. When it comes to room temperature cut the Coconut mixture as a BARFI or make LADDU shape, as per your choice. Here I make COCONUT LADDU shape.

Your FRESH COCONUT LADDU|BARFI is ready. Garnish with pistachios, serve it.

USEFUL NOTE

You can store this COCONUT LADDU/BARFI in a air tight container , keep in refrigerator and consume for one week.
