HOW TO MAKE ALOOR ROSHBORA
INGREDIENTS
FOR DOUGH
Potatoes ( Aloo ) - 3 medium size
All purpose flour ( Maida ) - 2 tablespoons
Semolina ( Sooji ) - 2 tablespoons
Fennel seeds - 1 teaspoon
One pinch salt
Water as required
FOR SUGAR SYRUP
Sugar - 1 cup
Water - 11/2 cup
Green cardamom - 2 no.
OTHER INGREDIENTS
Oil for deep fry
PROCESS
At first boil the potatoes & remove all the pell & mashed the potatoes.
Add all purpose flour with mashed potato, than add semolina, fennel seeds and salt. Mix all ingredients very well. Knead it and make a dough. If you need water, you can use it a little. Keep it aside.
Add sugar and water in a pot, turn on the gas oven and start stirring until sugar is completely dissolved. Add green cardamom. Once it starts to boil, when sugar syrup is thick, switch off the gas flame. Keep it aside.
Now take a fring pan pour oil and heat it. Make small size potato balls from the dough. Deep fry them until golden brown colour. Remove from the oil.
Put all fried potato balls in lukewarm sugar syrup and rest for 20 minutes - half an hour. All potato balls soak sugar syrup very well. Then serve ALOOR ROSHBORA. Enjoy.
