CHENNA PODA is papular paneer based sweet recipe from the traditional Oriya cuisine. CHENNA PODA means roasted chenna or cottage cheese sweet in Odisha, Eastern India. It is made of well kneaded homemade fresh chenna ( cottage cheese ) with sugar or jagerry, raisins, nuts and bake it untill brown in colour. It is very tasty and delicious dessert recipe. It's daily offered to Lord Jagannath in Puri tample as a prasad. Chenna PODA is special sweet during Lord Jagannath ratha jatra(Car Festivals). Let's started.
HOW TO MAKE CHENNA PODA
INGREDENTS
Milk ( cow or full cream ) - 1 litre
Lemon - 2 no. ( Make juice )
Sugar - 100 gm ( as your taste )
Semolina - 2 tablespoons
Ghee - 11/2 tablespoons
Cashew nuts - 2 tablespoons
Raisins - 2 tablespoons
Almond - 1 tablespoon
Cardamom powder - 1 teaspoon
PROCESS
FOR MAKING CHENNA
Take one litre of cow's milk in a vessel and boil it. Let it be worm condition.
Next add lemon juice mix with little water and stir it, mix well untill total milk turn into curdled, water separates from newly formed curdled mix.
Then strain the chenna (cottage cheese) through a muslin cloth.
FOR MAKING CHENNA PODA
Take a bowl, transfer the chenna (cottage cheese) into the bowl. Mash the chenna by hand or spoon well to make it soft.
Next add semolina, sugar and some chenna water with chenna(cottage cheese). Mix well and stayed it for 10 - 15 minutes.
Then add cashew, almond, raisins and cardamom powder. Mix them well.
Now take a microwave safe baking mould, grease it with ghee and keep butter paper into the base of mould. Again spread some ghee over the butter paper ( If butter paper is not available, may be grease by the ghee).
Now pour the mixture into the mould and tap it for spread the mixture properly into the mould.
Then preheat your oven for 10 minutes at 180°C & baked it for 45 - 50 minutes at 170°C. After baking it it's look golden brown colour.
Bring it out from microwave, leave it for cooldown.
Next remove your Chenna Poda from mould and separate the butter paper from it.Your CHENNA PODA is ready to serve. Cut into slices as your choosable shape.
USEFUL NOTE
If you want to make CHENNA PODA by the gas oven, take a pressure cooker pour half Kg salt inside the cooker. Preheat the cooker for seven to eight minutes on high flame. Place the container inside the cooker and bake it medium to low flame until golden brown colour. Don't waste chenna water, save it re-use. The saved chenna water may you use to make any curry, dough for roti instead of water. You can use jaggery in place of sugar.
